Pineapple Mango Smoothie Boats

Sweet juicy pineapple is made into a boat and filled with a smoothie composed of tropical flavors. Freshly squeezed orange juice, ripe honey mangoes, juicy pineapple and sweetly spotted bananas create a sensation for each and every one of your taste buds. Top it with some banana slices, coconut flakes and serve it with some fresh mango and you are are a breakfast god or goddess! Simple but impressive and fun. This recipe offers such a delicious base that you can easily mix it up and make it even healthier with super-foods and even a cup or two of leafy greens and a dash of spirulina for a green smoothie. We had this bright breakfast yesterday and loved it! I served the extra smoothie on the side and then chopped and froze any remaining pineapple. May you have a bright start to your day and weekend! Total Time: 15 Minutes | Servings: 2 | Calories: 448 per serving

Ingredients:

​1 Ripe Pineapple
2 Ripe Mangoes (I used Honey/Ataúlfo); Divided
3 Ripe Bananas; Divided
2 Oranges 
2 Tbsp Coconut Flakes 
Opt: Super-foods / Protein Powder (I used a little of each: Chaga, Reishi, Resveratrol, Moringa and Elderberry powder.)

Peaceful Preparation:
  1. Carefully slice the pineapple in half lengthwise with a large knife. Take a smaller knife and cut out a bowl to pour the smoothie into, place the pieces you removed into a blender.
  2. Take one mango and cut alongside the pit, each side. Then slice/score the inside cutting down to the skin yet not through it, fold it outward, pretty! Set aside. Cut any remaining mango from the pit and put it in the blender. Cut the other mango and put it in the blender.
  3. Place 2 bananas in the blender. Freshly squeeze the two oranges placing the juice in the blender. Blend until smooth.
  4. Pour into the pineapple boat and remainder into two small cups. Take the last banana, slice and place around the edges, sprinkle the coconut flakes on top. Serve with the pretty mango for a wonderful meal for two!!!
