Savory Lentils + What I Eat in a Day Episode 2

I have the most amazing lentil recipe for you. I whipped it up one day adding a dash of this and that until the smell literally drove my senses wild! 
When we bit in, it was heavenly. Lentils, oregano, paprika, pepper, garlic, onion and tomatoes make the most amazing dish that can be eaten alone or in a number of ways. We had it over a bed of rice, served with a fresh salad and berries. Get the text recipe below or in episode 2 of What I Eat in a Day showing an example of what one can eat on a plant-based lifestyle. Plus, this time it is narrated. Lots of love, Christa 
Savory Lentils:
½ Cup Lentils
1 ¼ Cup Filtered Water
1 tsp Salt
1 tsp Paprika
1 tsp Oregano
½ tsp Black Pepper
1 heaping tsp Minced Garlic
1/3 Cup Chopped Onion
1 Heaping Cup Chopped Tomatoes
 
Place everything together in a rice cooker or pot. Mix together and press cook. Relax as it cooks. Serve hot! 
We served ours on top of ½-3/4 cup of basmati rice each topped with a little tamari sauce. As well as a garden salad with added tomatoes, onions, almond slices, sunflower seeds, cherry tomatoes, with summer fruit on the side. A fresh, homemade, plant based meal that is balanced, healthy and packed with flavor. The dressing we used was: http://www.artisticvegan.com/blog/creamy-balsamic-vinaigrette-oil-free-vegan
