If you want a delicious thick garlic dipping sauce then give Skordalia a try!
This is a recipe that is special. It hails from Greek. My friend Renee Molinary shared her original authentic recipe from her mom with me and I modified it slightly to share with you all here. It's full of flavor and if you like garlic and thick creamy spreads and dips then give this a try and let me know what you think. I've never had it before and it was my first time making it so I hope I did it justice! The recipe is quick and easy and can be yours in no time at all.
Skordalia Greek Garlic Dipping Sauce
1 Large Potato - Chopped
5 Cloves Garlic
1/2 Cup Tahini
1/2 Cup Water
1/4 Cup Olive Oil (May Omit for oil-free)
1/2 Cup Apple Cider Vinegar
1/2 Cup Soft Bread
1 tsp Salt
Boil the potato until soft, drain. Set aside to cool.
Combine all of the ingredients in a blender, blend until smooth.
Use it as you desire!
From Renee's mom:
"Use to dip cucumbers, fried eggplant, or great on side of other dishes...."
