This morning I made a fresh batch of Spiced Tomato Ketchup to double check this recipe and was so happy with the results. Fresh tomatoes are blended with onion and garlic. A unique mix of spices are added creating a touch of hot, slightly sweet, acidic and bold flavor. This is not your standard sweet ketchup, it is rich and a bit spicy. It takes a little time to thicken but is worth it. The flavors meld together over time and the pink blended mixture turns into a deep red ketchup. Enjoy!
2 3/4 Cups Freshly Chopped Tomatoes
1/2 Medium Onion Roughly Chopped
2 Cloves Garlic - Peeled or 1/4 tsp Dry Powder
1/4 tsp Cayenne
1/2 tsp Paprika
1/8 tsp Cinnamon
1/2 tsp Salt
1/8 tsp Allspice
1 Tbsp Agave
1/4 Cup Apple Cider Vinegar
Season with Red Pepper Flakes to taste
Opt: 1/2 tsp Guar or Xanthum gum to thicken
