Stuffed Crust Pizza | Vegan & GF
Ingredients:
- 1 Pizza Dough Recipe
- 1/4 Cup Pizza Sauce of Choice
- 1-2 Cups Vegan Cheese of Choice (recipe below)
- 1 Zucchini Sliced Thin and into 1" Pieces - Grilled until golden
- 1/4 Onion - Sliced - Grilled until golden
- Salt & Pepper to Taste
- 1/2 Cup TVP (Recipe below) or meatless substitute
- 2 to 2 1/3 Cup All-Purpose Flour (Reg or Gluten-Free) 250 to 295 g
- 1 Pack Instant Yeast (2 1/4 tsp)
- 1 1/2 tsp Coconut Sugar (or preferred)
- 3/4 tsp Sea Salt
- 2 Tbsp Olive or Avocado Oil
- 3/4 Cup Warm Water - 110°F to 43°C

How to cook Stuffed Crust Pizza | Vegan & GF
- Combine the flour and salt in a bowl, mix well. Add the coconut sugar and instant yeast, mix to combine.
- Add the oil and water, use a wood spoon to mix together until you can no longer mix, then knead it until it forms a smooth ball.
- Place in a lightly greased bowl, cover with a damp towel. Rise in a warm place for 30 minutes or until doubled in size.
- Preheat the oven to 400° F, opt to use a pizza stone or place your pan in there now to get it hot.
- Deflate, place it on parchment paper or a silicone mat. Kneed a few times and spread it out into a 12" circle or a big circle.
- Brush the dough with a little oil and prick holes over the entire base with a fork.
- Leave a 2-3" border around the pizza dough and add the vegan cheese in a circle around the crust, take the excess dough from the border and fold it over the cheese ensuring to fully enclose the cheese. Use a little water at the end to smooth things out if needed.
- Add the pizza sauce to the base of the pizza.
- Add some of the vegan cheese, the TVP mixture, the grilled zucchini and onion. Extra cheese.
- I took the leftover marinade from the TVP and brushed it on the crust, along with a little extra olive oil to brown. Transfer to the baking sheet or pizza stone.
- Bake for 15-20 minutes or until golden brown and bubbling hot.
TVP Pizza Toppings
Ingredients:
- 1/2 Cup TVP
- 1/2 Cup Hot Water
- 1 1/2 Tbsp Soy Sauce or Tamari
- 1 Tbsp Oil or Pass
- 1 tsp Oregano
- ½ tsp Thyme
- Opt Pinch of Salt
- 1 tsp Paprika

- Combine ingredients.
- Set aside for 30 minutes for the TVP to absorb the water.
- Grill it, bake it, use it as you would sausage, tastes wonderful on pizza!
