Sunrise Chia Bowls with Mixed Berry Jam [Vegan, Raw, Gluten-Free]

Chia seeds are extremely popular in plant based cooking, especially right now! Growing up I remember the Cha-Cha-Cha Chia commercials and didn’t know it was a super-food. Studies indicated chia seeds positively influence the thyroid gland.  By soaking the chia seeds overnight it will increase the digestibility allowing your body to absorb the nutrients immediately. This recipe is wholesome, hearty and incredibly good.

The vanilla and banana creates a sweet and creamy substance for the chia and oat s to soak into overnight. Topping with fresh banana slices and homemade jam brings this meal to the next level!  Get ready to lick your bowl!

This is:
  • CREAMY

  • FEEL GOOD FOOD!
Vanilla Chia Bowls
  • 1/3 Cup Uncooked Oats*
  • 2 Tbsp Raw Chia Seeds
  • 1/4 tsp Vanilla Extract
  • 1 Cup Coconut Milk*
  • 1 Ripe Banana - Mashed

Mixed Berry Jam:
  • 2 Cups Fresh or Frozen Mixed Berries
  • 2 Tbsp Raw Chia Seeds

Top With:
  • 1 Fresh Banana

Peaceful Preparation:
  1. Mix the uncooked oats, chia seeds, vanilla, coconut milk and mashed banana together. Stir to evenly distribute, cover and soak overnight in the fridge.
  2. Make the mixed berry jam by combining the mixed berries and chia seeds together in a food processor, pulsing until combined. Transfer to a jar, cover and place in the fridge overnight.
  3. The next day, stir the Vanilla Chia Oat Mixtrue intoa  cup or bowl, layer with fresh banana slices. Carefully spoon the berry jam on top of the banana slices, repeating until your cup is full. Serve with love!

Notes:
  • I like to use Bob Red Mill's Gluten Free Oats for a gluten-free variety.
  • Use your favorite non-dairy milk. I've made this with other non-dairy milks (almond, cashew, pecan..) with great success!
  • Skip the ripe banana in the Vanilla Chia Bowls. I've done this before and it's still very tasty!
  • Use your favorite berry for the jam.
  • Add an extra tbsp or two of chia seeds for a thicker consistency in the chia bowls and/or jam. Adapted from IntoThe Gloss
