Sweet Potato Avocado Toast & Sandwiches

- 1 Large Sweet Potato (+ more as desired)
- 1 Avocado
- 1/2 Lime
- Salt & Pepper
- Favorite Toppings

How to cook Sweet Potato Avocado Toast & Sandwiches
- Preheat the oven to 400°F. Mine was at 350°F, so it took a bit longer, feel free to use the higher heat.
- Slice the ends off the sweet potato, remove the skin.
- Slice into your desired "bread" slices, about 1/4" thick.
- Lay down on a lightly greased pan or one lined with parchment paper or a silicone mat.
- Cover with a little oil (I used avocado) or lime juice for oil free. Sprinkle with your favorite seasonings, I used salt, pepper, chili powder and cumin powder.
- Roast for 30-45 minutes until golden and done like a sweet potato fry, a little soft on the inside with a nice exterior. Flip halfway.
- Remove and top with your favorite toppings, serve open-faced for toast or make into a sandwich. Enjoy savory and / or sweet.
- Mash the avocado with the lime, salt and pepper and spread on top for avocado toast, adding extras as desired.
