- 1 Small Red Onion - Chopped
- 2 Large Garlic Cloves - Chopped
- 1 1/4 Cup Chopped Mushrooms
- 2 Heaping Cups Chopped Tomatoes
- 3/4 Cup Fresh Oregano
- 1 1/2 Cup Dairy Free Milk
- 1 tsp Salt
- 1 tsp Ground Black Pepper
Directions:
- Saute the onions and garlic in water or vegetable broth for 2 minutes, or until soft.
- Add the mushrooms and saute until fragrant.
- Add the tomatoes, salt and pepper. Mix well and cook for 5-7 minutes over medium-high heat, until the tomatoes begin to fall apart.
- Add the fresh oregano, stir to mix. Add the dairy free milk, reduce heat and simmer for 10-15 minutes. Stir frequently. Serve hot!
