Winter Warrior Soup
ingredients:
- 1 TBSP Olive Oil
- 2 Carrots â Diced
- 1 Med Onion â Diced
- 1 Celery Stalk â Diced
- 4 cloves garlic minced
- 1 tsp paprika
- 1 tsp parsley
- ½ tsp basil
- 2-3 Bay Leaves
- 1 tsp turmeric
- Salt and pepper to taste
- 3 oatballs or 1 cup meatless crumbles of choices
- 1/2 kg or 1.1 lb green beans â diced
- ½ head broccoli chopped
- 8 cups vegetable broth
- 4 cups diced tomatoes
- 2 Pieces Corn on the Cob (Sweet)
- 2 potatoes chopped
- 3 cups kidney beans
- 1 cup TVP

How to cook Winter Warrior Soup
- Add the olive oil to the pan, add the carrots, onion and celery, add a sprinkle of salt and pepper, saute for 8 minutes.
- Add the garlic, cook for 30-60 seconds.
- Crumble to oat balls and saute.
- Add the paprika, parsley, basil and turmeric, cook for 30 seconds.
- Add the balance of the ingredients: tomatoes, corn on the cob for more flavor, potatoes, green beans, broccoli, kidney beans and TVP. Bring to a simmer. Cook for 30 minutes.
- Serve hot as is or blend and serve smooth! Enjoy!
