Winter Warrior Soup

1 TBSP Olive Oil
2 Carrots â Diced
1 Med Onion â Diced
1 Celery Stalk â Diced
4 cloves garlic minced
1 tsp paprika
1 tsp parsley
Â½ tsp basil
2-3 Bay Leaves
1 tsp turmeric
Salt and pepper to taste
3 oatballs or 1 cup meatless crumbles of choices
1/2 kg or 1.1 lb green beans â diced
Â½ head broccoli chopped
8 cups vegetable broth
4 cups diced tomatoes
2 Pieces Corn on the Cob (Sweet)
2 potatoes chopped
3 cups kidney beans
1 cup TVP
How to cook Winter Warrior Soup
Add the olive oil to the pan, add the carrots, onion and celery, add a sprinkle of salt and pepper, saute for 8 minutes.
Add the garlic, cook for 30-60 seconds.
Crumble to oat balls and saute.
Add the paprika, parsley, basil and turmeric, cook for 30 seconds.
Add the balance of the ingredients: tomatoes, corn on the cob for more flavor, potatoes, green beans, broccoli, kidney beans and TVP. Bring to a simmer. Cook for 30 minutes.
