We mastered the art of vegan ranch last week and this week we're going to take it up a notch. Broccoli Ranch Twice Baked Potatoes. A delicious fun recipe to try. Potatoes are parboiled to save time, roasted, stuffed with potatoes, ranch and broccoli, baked further and then topped with all the goodies. Yes, please!!!

2 Large Potatoes or 8 Small Potatoes
1 tsp Coconut Oil or Coconut Butter
1/2 Cup Finely Chopped Broccoli
1/2 Cup+ Vegan Ranch of choice
Green Onions - Sliced
Salt & Pepper to taste
Peaceful Preparation:
1.) Pierce your potatoes with a fork. Place in water, add a pinch of salt. Cover with a lid. Turn on the flame. Bring to a boil, boil until you can pierce it easily. Strain.
2.) Preheat the oven to 450°F / 230°C. Lightly coat the potatoes with a little coconut oil or coconut butter plus salt and pepper to taste. Roast for 30-35 minutes or until desired / done.
3.) Slice the potatoes in half, place the top half in a bowl. Cool slightly. Scoop out the inside. place it in the bowl, leaving 1/4" around the sides and base for stability.
4.) Add the vegan ranch and a little pepper to taste, mash until creamy. Fold in the broccoli.
5.) Re-stuff the potato, bake for 15 more minutes.
6.) Top with extra vegan ranch, chopped broccoli and green onions. Serve hot!
