Creamy African Peanut Stew | Guisado de Cacahuate Africano Cremoso

Creamy African Peanut Stew is unbeatable. The peanut butter addition is amazing, it creates a delicious flavor and amazing creaminess. I added "everything but my kitchen sink" as they say so feel free to use as much or as little of the vegetables and beans as you'd like and want in your soup.

You can have it chunky or our favorite, blended until it's thick and creamy. I served ours with quinoa and cilantro with a little lime juice on top, it's mmm mmm good.

This makes a HUGE batch of stew so use your biggest pot and enjoy it with company, for meal prep or to freeze for future meals.

Ingredients: 
  • 1 Onion Chopped
  • 1/2 Jalapeño – Chopped or to taste 
  • 1 Carrot – Chopped
  • 1 Red Bell Pepper – Chopped
  • 2 Potatoes (1 White and 1 Sweet or as preferred)
  • Opt: 1 Small Eggplant – Sliced then Chopped* 
  • 1 Tbsp Minced Garlic 
  • 1 Tbsp Minced Ginger
  • 1 Head of Broccoli or Bunch of Leafy Greens – Chopped
  • 1 Tbsp Ground Cumin
  • ½ Tbsp Paprika
  • Ground Chili to taste
  • 2 Tbsp Vegetable Broth Powder (or pass and use broth below)
  • 5 - 6 Cups of Water (or vegetable broth) 
  • 1 Can Chopped Tomatoes or 3-4 Roma Tomatoes Chopped
  • 1 1/2 - 2 Cups Cooked Beans (Favorite type)
  • 3/4 to 1 Cup Creamy Peanut Butter
  • Season with S&P 
  • Oil, Water or Vegetable Broth to sauté with
Serve with: 
  • Quinoa
  • Lime – Squeezed
  • Cilantro 
  • Optional: Dash of Cayenne
  • ​Optional: Flat Bread of choice ​

Peaceful Preparation: 
  1. Heat a pan over medium-low heat, add oil or vegetable broth/water. Once warm, add the onions. Sauté for 6 minutes with a pinch of salt.
  2. Slice the eggplant and sprinkle salt on it, set aside.
  3. Add the peppers to the onions, cook for 5 minutes. Add the spices – the cumin, paprika, ground chili, vegetable broth powder, cook for 30 seconds. Add the water and potatoes, cook with a lid on for 15 minutes or until simmering.
  4. Wipe the salt off the eggplant and chop. Add the eggplant, broccoli, tomatoes and cooked beans. Cook for 20 minutes.
  5. Add the Peanut Butter. Enjoy chunky or blend until smooth, add salt, pepper and chili powder or cayenne to taste. Add a little lime juice. Serve with quinoa and cilantro. Optional flat bread.

Ingredientes:
  • 1 cebolla – Picadas
  • 1/2 jalapeño - Picados
  • 1 Zanahoria – Picados
  • 1 Pimienta Roja – Picados
  • 2 Papas – Picados (1 Blanco y 1 Batata or su preferencia)
  • 1 cucharada de ajo – Picada
  • Opcional: 1 berenjena pequeña - En rodajas luego picados*
  • 1 cucharada de jengibre picada
  • 1 Cabeza de brócoli picado o espinaca
  • 1 Cucharada comino molido
  • ½ Cucharada Paprika
  • Chile en polvo al gusto
  • 2 Cucharadas Caldo de Verduras en Polvo
  • 5-6 Cups of Agua
  • 3-4 chico jitomate picados
  • 1 1/2 - 2 tazas Frijoles Cocido (su preferencia)
  • 3/4 - 1 taza crema de cacahuate
  • Aceite o caldo de verduras / agua
  • Lima exprimido
  • Cilantro

Preparación Pacífica:
  1. En una olla mediana sobre llama mediana añadir agua or aciete. Saltear la cebolla durante 6 minutos con una pizca de sal.
  2. Cortar la berenjena y espolvorear sal en ella, dejar a un lado.
  3. Agregue los pimientos y cocine durante 5 minutos. Agregue los ajo y jengibre durante 3 minutos. Agregue las especias – el comino, pimentón, chile molido, caldo de verduras en polvo, cocine durante 30 segundos. Agregue el agua y las patatas, cocine con la tapa puesta a fuego lento durante 15 minutos o hasta que estén a fuego lento.
  4. Limpie la sal de la berenjena y córtela. Agregue la berenjena, el brócoli, los tomates y los frijoles cocidos. Cocine durante 20 minutos.
  5. Añade la crema de cacahuate. Disfruta o licúe hasta que quede suave, agregue sal, pimienta y chile en polvo o cayena al gusto. Añadir un poco de jugo de lima. Sirva con quinua y cilantro. Pan plano opcional.

Hi! Just wanted to let you know I've tried a few of the book's recipes...like the chili lime almonds and the Thai salad dressing! I also tried the pulled zucchini! The chili lime almonds have been a nice addition to the salad you suggested...and...I like them as you and Gerald have...just for snacking! Thank you Christa for your high energy!
