For the last month or more my parents and I have been getting together on Saturday for grill day! We gather food at the market, come back and then prepare it on the grill. I rented a home with a beautiful grill and my neighbor has been kind at ensuring we have wood.
It's a beautiful day, Saturday. Gather, grill, laugh, enjoy and eat. The food is magically brought to new dimensions. A juicy peach is suddenly mouthwatering delicious.
In general you want to prepare your grill. While the fire or coals are getting hot you can prepare the fruit and vegetables. Hearty things like a beet, lightly oil and double wrap in foil and place directly in the coals. You could do this with other root vegetables like a potato or sweet potato. You can prepare the fruits and vegetables in a number of ways. Corn directly in the husk or oiled and placed in foil. Carrots are delicious when sliced into spears, onions sliced into circles, chayote or other squash sliced as desired and then with most of them a little coconut oil, desired seasoning like herbs and spices, maybe salt and pepper or pass and add it at the end to keep moisture levels high. Place on the grill over medium-high or medium, let the fire do the work. Flip after 15 to 20 minutes depending on the thickness and what it is, and take it to the other side for another 15-20. It's longer if it's a potato, or less for a zucchini. My dad taught me with mushrooms face the cap up so the juices gather inside the cap, and same goes for a peach. Keep the moisture in. In some cases you want it crispy like the onion, my mom really loves that. You can also wrap the vegetables in foil and steam them with a little oil, herbs, garlic, onions. Experiment, have a good time and enjoy the fruits of the grill!!
A raw cabbage is transformed into a heavenly caramelized treat. Carrot spears are crazy good, onion slices and garlic are dimensions of flavors beyond where they started. The list goes on! The fun thing is to experiment, eat good good, spend time with loved ones and enjoy what time we have together.
