Peaches & Cream Oatmeal

Summer is here and with it are delicious smelling peaches. Such a unique fragrance that makes my mouthwater. Memories of biting into a juicy peach and having it go down my arm in the summertime comes to mind. Never did I think to grill these bad boys and put them on oatmeal but boy am I glad I did for this recipe. Peaches & Cream Oatmeal. A delightful way to start the day with healthy ingredients for a beautiful glow from the inside out. The creamy base with infusion of cinnamon, chunks of warm peaches, a healthy drizzle of cream, a tiny drizzle of sweetener, chopped almonds and grilled peaches. Yes, please!

Ingredients:
1 1/2 Cup Water
1/2 Cup Oats
Opt: Pinch of Salt
1 tsp Cinnamon
2 Peaches; Divided
3 Tbsp Dairy Free Milk or Dairy-Free Heavy Cream + extra to top
2 Tbsp Sweetener; divided 
1/2 tsp Pure Vanilla Extract 
2 Tbsp Chopped Almonds
2 Tbsp Cultured Sour Cream / Crème Fraîche

Peaceful Preparation:
  1. Combine the water, oats, salt if using, cinnamon and cook for 10 minutes stirring frequently / as needed.
  2. Slice the peaches into slices. Reserve 1/4 cup for inside. Add the 1/4 cup peaches, cream, 1 tbsp of the sweetener and cook for 5 more minutes. At the end remove from the heat and mix in the vanilla extract. Pour in two bowls.
  3. While cooking the oatmeal, grill the peaches. Use a little coconut oil or go oil-free and grill the peaches on a cast iron skillet or preferred pan. Grill until seared and colored. About 3-5 minutes per side. 
  4. Decorate: Top the oatmeal with 1 spoonful of dairy free milk or heavy cream. Drizzle 1 tbsp of the cultured sour cream on each bowl. Add a sprinkle of cinnamon. Add the remaining sweetener, 1 tbsp or less/pass if preferred. Add the grilled peaches to one side and place the almonds next to them. Serve hot! 

Sweetener Suggestions: Maple Syrup, Agave Syrup, Brown Rice Syrup, Coconut Nectar, Coconut Sugar, Stevia to taste.....
