Sometimes you want a quick bowl of cereal in the morning, like old times. You can still have cereal as a vegan. This recipe is made using puffed quinoa, a homemade granola for crunch and extra energy, a sprinkle of chia seeds, dried fruit with fresh strawberry slices and coconut milk on top.
Plus, this breakfast is full of fiber, protein, vitamins, minerals, omega 3 fatty acids, miconutrients, energy-enhancing foods, antioxidants, potassium, manganese, iron, calcium, vitamin B and much more! Plus it is soooo good for your body and tasty going down.
2 Cups Puffed Quinoa
1 Cup Original Granola (use maple syrup and make granola vs. bars)
2 Tbsp Chia Seeds
Handful Dried Fruit
8-10 Fresh Strawberries - Sliced
Coconut Milk - Desired Amount
Divide and layer the ingredients in two bowls, top with desired amount of coconut milk and eat up! Easy!
Quinoa is all natural, a good source of fiber, one of the most protein rich foods, has B2 and more! The granola is made with oats which are said to help lower bad cholesterol, are loaded with fiber and is a great way to start your day giving you the energy you need. The dried fruit acts as a natural sweetener. The chia seeds have lots of protein, more fiber, are a good source of omega-3 fatty acids and micronutrients. Plus, they are another natural energy-booster. Strawberries are fat-free, cholesterol free, low cal and are bursting with antioxidants, potassium and manganese. Coconut Milk is seriously so creamy and delicious, plus it is another good source of fiber, has multiple vitamins including B, minerals including iron, calcium and is lactose free so more may enjoy it.
