Spring into Health Buddha Bowls
Ingredients:
- 1 Corn on the Cob
- 1/2 Crown of Broccoli - Chopped
- 1 Carrot - Sliced
- Water to steam
- Salt to taste

- 1 Cup Quinoa, precooked and heated
- 1 Recipe Tofu Eggs: https://www.artisticvegan.com/blog/plantbased-protein-breakfast-bowls (plus cumin if desired)
Instructions:
How to cook Spring into Health Buddha Bowls
- Either boil water with salt and add the corn, boil until done or remove the kernels to steam, that's what I did.
- Slice the crown of broccoli in half, remove the florets.
- Slice the carrot.
- Place the vegetables in a steamer basket and steam until soft. I used the instant pot for 3 minutes. :)
- Serve with quinoa, tofu scramble or "eggs" and your favorite dressing, we used the green dressing. Enjoy!!!
