Vegan French Toast

My dad recently came to Mexico for a visit, he happened to be here on his birthday. What better way to celebrate than with an indulgent breakfast made by your daughter. It had been since May that I released a cooking video... it was time. So here I am once again with a vegan recipe for you to dive into.

Artisan Bread is dipped, coated and pan-fried to perfection. It is then topped with coconut whipped cream, fresh berries and maple syrup. An indulgent, delicious breakfast that is quick and easy. ​

The taste is better than you'd expect. My dad and friend Jesus tried both and loved it! My dad said it was better than traditional French Toast. What? So come get some!

Vegan French Toast

Yield: 4-5

Artisan Bread is dipped, coated and pan-fried to perfection. It is then topped with coconut whipped cream, fresh berries and maple syrup. An indulgent, delicious breakfast that is quick and easy. ​

Ingredients

Vegan French Toast
  • 1/2 Block Silken Firm Tofu
  • 1/2 Cup Unflavored Almond Milk
  • 1/4 tsp Sea Salt
  • 1/4 tsp Black Salt (sub: sea salt)
  • 1/2 tsp Ground Cinnamon
  • 1 Tbsp Nutritional Yeast
  • 1/2 Tbsp Tapioca Starch (or Potato, Arrowroot, Corn...)
  • 1 tsp Baking Powder
  • 1 tsp Pure Vanilla Extract
  • 1/2 Tbsp Maple Syrup
  • 1 Tbsp Vegan Butter or Coconut Oil
  • 8-10 Slices Hearty Bread 

Instructions

Peaceful Preparation:
  1. Add everything to the blender excluding the vegan butter and bread. Blend until smooth. Pour into a shallow dish.
  2. Heat a non-stick pan over med-heat until hot.
  3. Add the vegan butter. Allow it melt, spread it out.
  4. Dip both sides of the bread in the batter, generously coat each side well, dip one side, the other, dip again.
  5. Pan-fry for 4-5 minutes. Don't flip it or move it at all. After 4-5 minutes, flip it. Cook for 4-5 minutes on the other side, undisturbed.
  6. Serve immediately, each side should be golden. 
  7. Serve as desired, optional vegan butter, maple syrup, maybe some fresh fruit and vegan whipped cream.

Notes:

Use your favorite dairy free milk.
