Vegan Holiday Dinner: Roasted Sausages with Apples and Potatoes

​Don’t you love those meals that you can throw everything onto a pan, fill the house with unreasonably good smells and then serve a beautiful meal? I know I do! Today I’m going to share a Dinner for Four. If you have guests come over it looks enticing next to salad, warm bread and a warming beverage. It also is a complete meal in one spot so you can serve it up in any dish and dig in. That’s how we do it around here and add dipping sauces. 
This meal includes baked apple sage sausages with roasted potatoes, sweet potatoes, apples, herbs, onions, garlic, flavors of sage and so much more. It creates a flavorful meal in one beautiful spot. It looks so nice you can serve it from the oven to the dinner table and wow your loved ones. Vegan or not with flavors these good you'll be thankful to take part in this meal. The cleanup is easy since it's all done in one pan, so let's hop to it!

Ingredients:
  • 4 Smoked Apple Sage Sausages (storebought or homemade for gf)
  • 2 Apples - Cored, Peeled & Sliced
  • 1 Potato – Chopped
  • 1 Sweet Potato - Peeled & Chopped
  • 3 Lg Carrots or 6 Smaller - Sliced in Coins 
  • 4-5 Stalks of Celery - Chopped 
  • 1/2 large red onion, slice in half and quarter
  • 3 Cloves Garlic - Minced 
  • 1 tbsp crushed dried sage leaves dried or 2 tbsp freshly minced
  • 1 1/2 tsp Paprika (smoked is great here) 
  • 1/2 tsp Salt and Pepper or to taste
  • Dash of Cayenne if desired
  • 1 tsp Toasted Fennel Seeds (toast on nonstick pan until fragrant)
  • 2 tbsp Coconut Sugar
  • 1 Tbsp Liquid Smoke (hickory or favorite flavor)
  • 1 Tbsp Rice Vinegar
  • 1 Tbsp Dijon Mustard

Peaceful Preparation: 
  1. Preheat the oven to 400 F degrees. Line a 9 x 13 with baking paper or lightly grease.
  2. Bake the potatoes and sweet potatoes for 20-30 minutes until about 1/2 way done.
  3. While the potatoes cook, prepare the balance. Add everything except the sausages to a large bowl including the cooked potatoes, herbs and seasonings. Toss with hands or favorite utensil to coat.
  4. Transfer to the 9 x 13 pan. Place the 4 apple sage sausages in and around the ingredients.
  5. Cook for 30 more minutes or until everything is cooked. Turn pan 1/2 way through. Serve hot! 
 
You can use your favorite vegetables, reduce or omit the coconut sugar and chop everything as you wish leaving the skin on or off vegetables as desired.
