- 4 Smoked Apple Sage Sausages (storebought or homemade for gf)
- 2 Apples - Cored, Peeled & Sliced
- 1 Potato – Chopped
- 1 Sweet Potato - Peeled & Chopped
- 3 Lg Carrots or 6 Smaller - Sliced in Coins
- 4-5 Stalks of Celery - Chopped
- 1/2 large red onion, slice in half and quarter
- 3 Cloves Garlic - Minced
- 1 tbsp crushed dried sage leaves dried or 2 tbsp freshly minced
- 1 1/2 tsp Paprika (smoked is great here)
- 1/2 tsp Salt and Pepper or to taste
- Dash of Cayenne if desired
- 1 tsp Toasted Fennel Seeds (toast on nonstick pan until fragrant)
- 2 tbsp Coconut Sugar
- 1 Tbsp Liquid Smoke (hickory or favorite flavor)
- 1 Tbsp Rice Vinegar
- 1 Tbsp Dijon Mustard
Peaceful Preparation:
- Preheat the oven to 400 F degrees. Line a 9 x 13 with baking paper or lightly grease.
- Bake the potatoes and sweet potatoes for 20-30 minutes until about 1/2 way done.
- While the potatoes cook, prepare the balance. Add everything except the sausages to a large bowl including the cooked potatoes, herbs and seasonings. Toss with hands or favorite utensil to coat.
- Transfer to the 9 x 13 pan. Place the 4 apple sage sausages in and around the ingredients.
- Cook for 30 more minutes or until everything is cooked. Turn pan 1/2 way through. Serve hot!
You can use your favorite vegetables, reduce or omit the coconut sugar and chop everything as you wish leaving the skin on or off vegetables as desired.
