One of my favorite meals is a simple meal. It covers all the basics, is satisfying and easy to put together.
Tonight, for dinner we had just that. Brown rice, beans on top, fresh corn off the cob, guacamole, salsa, refreshments and chips. Easy peezy and so good. We ate it right up. The best part is if you are making things from scratch you can make extra and call it food-prep, then have it again or use it in other meals. I hope you adore this oh so easy meal.
I did not measure anything but I don't think you really need to for this recipe. Make extra everything for meal prep and scoop a little of this and that. The measurements are my best guess but really, you don't have to measure a thing.
