- 1 Cup Almonds
- 3/4 Cup Dates
- 2 Tbsp Nut or Seed Butter
- 1/2 tsp Pure Vanilla Extract
- 1/4 tsp Salt
- 1/4 Cup Water
- 1 Tbsp Chia Seeds or Flax Meal
- 1/4 tsp Baking Soda
- 1/4 tsp Baking Powder
- 1/3 Cup +/- Chocolate Chips
- Place your almonds in a food processor or blender and grind into a fine flour.
- Combine the water and chia seeds or flax meal together. Mix and set aside for 3 to 5 minutes to congeal.
- In a food processor add the dates, nut butter, vanilla, congealed chia or flax mixture, and salt if using. Mix together until it moves as one unit as is a sticky consistency.
- Whisk the almond flour, baking soda and baking powder together. Add the dry mixture a little at a time until it is incorporated fully. Stir in the chocolate chips.
- Place in the fridge for 1-2 hours to firm and make it easier to work with.
- Preheat the oven to 350 degrees F.
- With an ice-cream scoop or a spoon, place a scoop on a non-stick baking tray, or one lined with parchment paper or a silicone mat. I like to re-shape into cookie shapes. Proceed until done. Makes about 10 cookies.
- Bake for 11 minutes or until golden. ENJOY!!!!
