Healthy Chocolate Chip Cookies + Exciting Features

These cookies are made with the healthiest ingredients. Nuts, dates, seeds and chocolate are the base of the cookies creating a flourless, refined sugar and oil-free, vegan cookie for many to enjoy!

These are so healthy you can have one as a sweet after a meal or a snack and not feel bad. I love healthy treats and this fits the bill. I recently demonstrated how to make these on The Leak Project with Rex Bear! I am so grateful to have the opportunity to share with everyone on his show and of course all of you!!! I showed how to make the Black Bean Sweet Potato Burgers and then I whipped these up since I hadn't shared them yet and they're so easy! The original recipe for these came from the No Bake Chocolate Chip Cookie Dough Bites, with a little extra ingredients added for a nicer baked cookie. Whether you want cookie dough or cookies, you can't go wrong! YUMMM!!!

Ingredients:
  • ​1 Cup Almonds
  • 3/4 Cup Dates
  • 2 Tbsp Nut or Seed Butter
  • 1/2 tsp Pure Vanilla​ Extract 
  • 1/4 tsp Salt
  • 1/4 Cup Water
  • 1 Tbsp Chia Seeds or Flax Meal
  • 1/4 tsp Baking Soda
  • 1/4 tsp Baking Powder
  • 1/3 Cup +/- Chocolate Chips 
Peaceful Preparation:
  1. Place your almonds in a food processor or blender and grind into a fine flour.
  2. Combine the water and chia seeds or flax meal together. Mix and set aside for 3 to 5 minutes to congeal. 
  3. In a food processor add the dates, nut butter, vanilla, congealed chia or flax mixture, and salt if using. Mix together until it moves as one unit as is a sticky consistency.
  4. Whisk the almond flour, baking soda and baking powder together. Add the dry mixture a little at a time until it is incorporated fully. Stir in the chocolate chips. 
  5. Place in the fridge for 1-2 hours to firm and make it easier to work with.
  6. Preheat the oven to 350 degrees F.
  7. With an ice-cream scoop or a spoon, place a scoop on a non-stick baking tray, or one lined with parchment paper or a silicone mat. I like to re-shape into cookie shapes. Proceed until done. Makes about 10 cookies. 
  8. Bake for 11 minutes or until golden. ENJOY!!!!
