- 1 Small Potato - Chopped
- 1/4 Red Onion - Whole Wedge
- 1/2 Jalapeno
- 1 Lg Clove Garlic or 2 Small - whole
- 1/3 Cup Potato Water (reserved from boiling)
- 1 Tbsp Soy Sauce (Coconut Aminos or Pass for soy-free)
- 1/2 tsp Turmeric
- 1/2 tsp Black Pepper
- 1/2 Lime - Freshly Squeezed or Lemon
- 1 tsp Dijon
- 1 tsp Cumin
- 1 tsp Paprika
- Salt or Garlic Salt to taste (up to 1 tsp)
- Dash Cayenne
- Pinch of Red Pepper Flakes or Chili Powder
- 2 Tbsp Nutritional Yeast (1/4 cup for extra cheesy)
Peaceful Preparation:
- Bring salted water to a boil. Once boiling add the potatoes and boil for 5 minutes.
- Add the onion, garlic and jalapeno to the boiling water, boil for 5 minutes or until soft. Drain, reserve 1/3 cup of the boiling water.
- Blend with the balance of the ingredients burping the lid to release steam if needed, or allow boiled veggies to cool. Blend until smooth, scraping down the sides as needed. Use as desired.
