It was Tuesday evening, I had just finished recording my new recipe video for you guys this week, had it for brunch but needed dinner. My brain instantly thought "tacos" as it was Tuesday and I went to Pinterest for some inspiration. I saw taco this and that in all kinds of unconventional ways. I soon was mixing this and that and before you knew it we had the most amazing dinner. Taco Pasta! See the image below.

Enchilada sauce, tortillas, vegetables and beans are stacked together in layers of flavor and then topped with a creamy cashew cheese sauce. This is a recipe fromThe Artistic Vegan Cookbook pg. 215. It's a complete meal in one, my husband and I both love it. The leftovers heated up again are great, it freezes well, great for meal-prep. Consider making a double batch of the cheese and sauce for extra dipping and serving. Enjoy my friends!

Nothing like a piece of hot berry pie fresh from the oven. Am I right? Who can resist? I surely cannot! Especially when it is made with love. A homemade crust, mixed berry filling, topped with care, baked until golden and served hot or cold. I doubt anyone will notice that it's free of refined sugar, dairy and gluten, they'll just be sneaking a little more. Easy to make oil-free. Get your slice!
